Chilli Paneer Fried Rice Recipe

Chilli Paneer Fried Rice



  • 1 teaspoon + 1 tablespoon oil
  • 175 grams cubed paneer
  • 2-6 dried red chillies, according to taste
  • 1 cup thinly sliced onions
  • 1 1/2 cups sliced capsicum
  • 3 cups day old cooked basmati rice
  • 3 tablespoons soya sauce
  • 1/2 tablespoon vinegar
  • 1/2 teaspoon of pepper powder, optional
  • 1/2 tablespoon ketchup, optional
  • A few spring onions chopped, or a few coriander sprigs chopped.
  • Either use one day old, left over rice, or make fresh rice and cool it down.

Method of Preparation

Place 1 1/2 cups basmati rice and 3 cups water in a vessel and bring to a boil. When it boils, reduce heat to low, cover with a lid and simmer for about 10 minutes, or till all the water is absorbed. Make sure the rice is not over cooked. Tip the rice onto a platter or tray, spread it out and let it cool completely.

Heat one teaspoon oil in a large, wide wok or non-stick kadai. If you don't have either, you can also use a large flat non-stick pan.

Add paneer cubes to the wok, and gently toss till the oil coats the paneer. Cook the paneer on medium heat, tossing occasionally, till it is lightly browned on all sides. Remove from the wok and place it on a plate.

Wipe the wok clean, and return it to the stove. Heat one tablespoon of oil. When the oil is hot, break the chillies in half, and add them to the oil. Let the chillies sizzle in the oil till they darken just a little.

Add the sliced onions and capsicum and sauté for about 30 seconds. Now crank up the heat to high, and immediately throw in the rice, soya sauce, vinegar, pepper powder if using. Working quickly, toss the rice till all the sauce is absorbed. It should take about a minute.

Keep tossing the rice so that it doesn't burn. Turn off heat, add ketchup and paneer cubes and mix well. Garnish with chopped coriander leaves or spring onions.

Adams discovered that tomatidine generates changes in gene expression that are essentially opposite to the changes that occur in muscle cells when people are affected by muscle atrophy.After identifying tomatidine, Adams and his team tested its effects on skeletal muscle. They first discovered that tomatidine stimulates growth of cultured muscle cells from humans."That result was important because we are looking for something that can help people," said Adams.They found that healthy mice supplemented with tomatidine grew bigger muscles, became stronger and could exercise longer. And, most importantly, they found that tomatidine prevented and treated muscle atrophy.

Interestingly, although mice fed tomatidine had larger muscles, their overall body weight did not change due to a corresponding loss of fat, suggesting that the compound may also have potential for treating obesity.

Apparently you can't reserve a jail cell on weekends. (Now there's a sentence I never thought I'd say.) When I call newly-opened Kaidi Kitchen to book a table, a surly waiter firmly tells me they have a strict - 'first come, first jailed' policy. So I round up my friends frantically: and trust me, it's not easy. "Hurry up and get ready. I want my own set of handcuffs." "Huh?" Not to mention the fact that Saturday night at a prison-themed restaurant throws up a host of unexpected sartorial questions. Would wearing stripes be too obvious? Are we allowed to keep our belts? And why can't I find a YouTube video to guide me through prison-appropriate make up?


Nevertheless we manage to stagger in at 7.30 p.m. The giggling begins when we see the ostensibly intimidating prison gates that guard the restaurant, then explodes into full-fledged hysteria when we enter. Kaidi Kitchen is broken up into two levels of chillingly authentic jail cells, each accessorized by cunningly positioned sets of dangling handcuffs. It's a disconcerting scene, served up with such glib cheer that the whole effect is surreal. Add solemn waiters dressed as jailors or convicts (presumably depending on seniority) and the whole effect is mind-boggling.

All this to explain why I collapse with laughter when I suddenly see an earnest jailor at my elbow brandishing menus. He rolls his eyes but doesn't crack a smile. Since I can't talk, my embarrassed friends quickly jab at the multi-page menu, randomly choosing food from each section. Then, as we wait, we watch the scene unfold with morbid fascination. At a neighbouring jail cell a pretty young thing is posing with handcuffs on for her enthusiastic iPhone-brandishing boyfriend. A child with squeaky shoes runs up and down the stairs, deftly dodging jailors. Two convicts chat busily in a corner. Then someone presses the 'red button' (set in each jail cell to call waiters) and a massive light begins to flash energetically.

"The most amazing thing is." whispers Friend 1, leaning forward, "They're not even being ironic!" Friend Two shakes her head, tut-tutting sadly, "It's so bizarre. I can see it working as a hip nightclub, or underground bar. But a vegetarian, multi-cuisine, family place?" She has a point. With the handcuffs, cells and lighting, the space has a distinct '50 shades of Grey' feel to it. Eating paneer makhani between pint-sized squealing children in this setting does feel uncomfortably dissolute.Nevertheless, as far as theme restaurants go this one is undeniably interesting. Besides, there seems to be a burgeoning market for these morose culinary experiences. In Spain the 'Disaster Café' specialises in "quality dining and tremors." In Singapore you can chill on a wheelchair and drink shooters from a syringe at the Clinic Bar. 'The Lock Up' in Japan is a 'haunted prison-themed restaurant' offering customers dark, damp prison cells to dine in.By the time our food arrives, the restaurant is packed. The food is surprisingly good. So much for our images of prison slop served in steel bowls. Our meal begins with Litti Choka, which arrives on a portable stove wrapped in the steamy fragrance of mustard. Popular in Bihar and Jharkand, these crisp little balls of dough are stuffed with roasted chickpea flour, then doused in warm ghee at the table. Eaten with an aromatic bowl of mashed potatoes, it's an indulgent - if overwhelmingly heavy -start. Next come the paneer tikkas, which are soft, fresh and perfectly crusty on the sides.

The main course involves garlic naans served with a rich kofta curry. We also experiment with their Kashmiri naan, a playful amalgamation of wheat and bright tutti-frutti bits. As we work our way through dinner Friend Three pokes me energetically with her fork, whispering, "I have an idea for your review." We look at her expectantly. "You can say." She pauses for adequate drama. "It's criminally good food in a criminally ridiculous setting." Groan. I should have seen that coming when she read aloud from the menu, boasting "opulent prison cells" and an "imprisonment of indulgence".

There's no respite from the ghastly jokes after that. Dessert turns out to be an unimpressive, and disappointingly hard sizzling brownie. "Psssst," whisper the friends, hacking away at it vigorously, in unison. "Maybe there's a file inside?" I glare. "What? You know it's important to complete a sentence." They slap each other on the back in delight. Then one holds up a plate and announces, "Did you know a clean thief always makes a stainless steal".

  • 1 tablespoon lime juice

  • ½ teaspoon cumin seeds (roasted and powdered)

  • 80 grams pine nuts (toasted)

Method

  1. Combine all the ingredients gently in a mixing bowl.
  2. Refrigerate for 45 minutes and serve along with crisps, grilled or steamed seafood.

Ingredients


  • 400 gm kidney beans
  • 100 gm refined oil
  • 10 gm turmeric
  • 50 gm ginger paste
  • 50 gm garlic paste
  • 2 gm cinnamon powder
  • 5 gm cardamom powder
  • 1 gm saffron
  • 30 gm red chilli powder
  • Salt to taste
  • 5gm sandalwood powder
  • 5gm bay leaf

Method

Soak the kidney beans for about two hours. Add water in sufficient amount plus bay leaf, ginger and garlic paste, turmeric, saffron, red chilli powder and salt. Simmer until the beans become completely tender.

Drain the water and use a mixer for mincing, two-three times to get a fine paste of the beans.

Mix it with hand properly and put the powder of the rest of the spices like sandal powder, cinnamon powder and cardamom powder, etc. Prepare patties according to your choice and shallow fry them with very small amount of refined oil or pure ghee. Serve hot.

As the summer beats down heavily, fix yourself a cool drink at home. Although a variety of readymade juices and fruit crushes are available in the market, it is always better to prepare one at home, devoid of additives and preservatives. Chilled lassi and buttermilk prepared using low-fat curd are also healthy summer drinks, next only to water. They are easily digestible than whole milk, and protein as well as calcium can be absorbed more easily by the body.

Here are a few recipes of drinks to keep yourself cool this summer.

Ice Tea


Ingredients

  • 2-inch piece of cinnamon
  • 2 cloves
  • 1 green cardamom
  • 5 tsp tea leaves
  • 7-8 tsp sugar (adjust as per taste)
  • 1 tsp grated ginger
  • 3-4 tsp lemon juice
  • 5 cups of water
  • A few fresh mint leaves

Method

Boil five cups of water with ginger, cinnamon, cloves and cardamom. Simmer for a few minutes. Add sugar, tea leaves and stir to mix well. Remove from fire. Add fresh mint leaves. Strain and set aside to cool. Stir in lemon juice and place in the refrigerator to cool. To serve, pour the chilled tea in tall serving glasses, put some ice cubes and garnish with mint leaves.

Pink Delight

Ingredients

  • 6 cups chopped water melon
  • 4 scoops strawberry ice cream
  • 3-4 tsp strawberry syrup
  • A few ice cubes crushed
  • Sugar to taste

Method

Put chopped water melon along with the seeds and blend to a puree. Strain to get the juice. Now put the juice, ice cream, strawberry syrup, sugar, and crushed ice together and blend. Pour the drink into serving glasses. Drop a few ice cubes and garnish as per your liking. Serve immediately.

Nimbu Jaljeera

Ingredients

  • 1.5 tbsp jaljeera powder
  • 2 tsp roasted cumin seeds powder
  • 2 tsp black salt
  • 6 tsp lemon juice
  • 5 tsp powdered sugar (adjust as per taste)
  • Quarter cup mint leaves
  • 2 tsp chopped coriander leaves
  • Half-inch-piece ginger, chopped
  • 5 cups of water
  • A few ice cubes
  • A few lemon wedges

Method

Grind mint, ginger, and coriander to a paste with a little water. Now mix this paste with cumin seeds powder, jaljeera, black salt, sugar and lemon juice. Add five cups of chilled water and blend all the ingredients. Pour into tall serving glasses, serve with ice cubes and decorate with lemon wedges.

Spicy Butter Milk


Ingredients

  • 1 cup chilled curd
  • 1 green chilli, chopped
  • Half tsp black salt
  • 1 tsp ginger juice
  • A few curry leaves, chopped
  • 1 tbsp chopped coriander leaves
  • 1 tsp roasted cumin seeds powder
  • Three-quarter tsp chaat masala
  • 2 cups of water
  • Salt to taste

Method

Combine green chillies, coriander, ginger juice, chopped curry leaves with a little water and blend in a mixer. Add curd and water to the prepared mixture and blend till smooth. Add chaat masala, roasted cumin seeds powder, black salt, salt and mix well. Keep this in refrigerator to chill. Serve chilled, garnished with roasted curry leaves.
